Broccoli Peanut Salad Recipe
- 1 1/2 lb fresh broccoli
- 2 x green onions -- minced
- 4 ounce pimiento -- diced, liquid removed
- 1/2 c. raisins
- 1/2 c. peanuts, dry-roasted
- 1/2 c. mayonnaise
- 2 Tbsp. honey
- Trim off large leaves of broccoli and remove tough ends of lower stalks; wash broccoli thoroughly.
- Cut stalks into 1/4 inch slices.
- Cut remaining broccoli into flowerets; place in a large bowl.
- Add in green onion, pimiento, raisins, and peanuts.
- Combine mayonnaise and honey in a small bowl; spoon dressing mix over top of broccoli mix.
- Toss gently to coat.
- Cover and refrigerate2 hrs.
- Yield: 6 servings.
