Autumn Chicken And Bean Bonanza Recipe

  1. Saute/fry onion, pepper, and garlic in oil in medium saucepan 2 to 3 min.
  2. Add in chicken, cumin, and cinnamon; cook over medium-high heat till chicken is lightly browned, 3 to 4 min.
  3. Add in beans, tomatoes, and raisins; heat to boiling.
  4. Reduce heat and simmer, uncovered, till slightly thickened, 5 to 8 min.
  5. Season to taste with salt and pepper.
  6. Additional NotesTIPS: Frzn minced onion and green pepper, and prepared garlic can be used.
  7. The dish is delicious served over cooked rice, couscous, or possibly pasta.
  8. Can be prepared 1 to 2 days in advance; chill, covered.
