Indonesian Vegetables (Gado Gado)
- 2 cups cauliflower, cut into florets, blanched Safeway 1 lb For $1.99 thru 02/09
- 2 cups broccoli florets, blanched
- 2 cups green beans, cut into 3cm lengths, blanched
- 1 cup carrot, roughly chopped, blanched Target 2 lb For $3.00 thru 02/06
- 1 cup lettuce, washed, separated into cups
- 4 hard boiled eggs, shelled and quartered
- Garnish
- 1/4 cup shredded coconut, toasted
- Sauce
- 3/4 cup coconut milk
- 1/2 cup KRAFT Crunchy Peanut Butter
- 2 teaspoons VEGEMITE
- Place blanched vegetables, lettuce and egg on a large platter.
- Combine sauce ingredients in a small saucepan, heat gently to avoid separation.
- Pour sauce over vegetables and egg, sprinkle with shredded coconut and serve.
