Flambeed Morello Cherries

  1. melt the butter in a skillet.
  2. Saute the cherries and sugar in the butter over high heat for 2 minutes.
  3. add the rum and flambe immediately.
  4. Reduce for 1 minute.
  5. Serve hot over ice-cream.
