Green Pea Soup

  1. Wash peas. Cover with water and soak 2 hours. Drain and rinse. Place in saucepan with chicken broth. Bring to simmering point over low heat. Cover and cook for about 1 1/2 hours until peas are tender.
  2. Saute onions, carrots and celery in butter for 5 minutes. Add to peas. Add sugar, mint, salt and pepper. Cook for 20 minutes. Puree the soup in blender.
  3. Strain into pan. Add cream and heat 2 minutes.
  4. Fry croutons in butter or oil.
  5. Garnish soup.
