Green Pea Soup
- 1/2 lb. dried split peas
- 5 c. chicken broth
- 2 Tbsp. butter
- 2 finely chopped onions
- 2 stalks chopped celery
- 1 c. sliced carrots
- 1 tsp. dried mint
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1/2 c. heavy cream
- 3 slices bread, cut into croutons
- 3 Tbsp. butter or oil
- Wash peas. Cover with water and soak 2 hours. Drain and rinse. Place in saucepan with chicken broth. Bring to simmering point over low heat. Cover and cook for about 1 1/2 hours until peas are tender.
- Saute onions, carrots and celery in butter for 5 minutes. Add to peas. Add sugar, mint, salt and pepper. Cook for 20 minutes. Puree the soup in blender.
- Strain into pan. Add cream and heat 2 minutes.
- Fry croutons in butter or oil.
- Garnish soup.
