Banana Chocolate Cupcakes Recipe

  1. Beat butter at medium speed with an electric mixer till creamy; gradually add in sugar, beating well.
  2. Add in Large eggs, banana, and vanilla, beating till blended.
  3. Stir together flour, soda, and salt.
  4. Add in flour mix to banana mix alternately with buttermilk, beginning and ending with flour mix; beat at low speed till blended after each addition.
  5. Stir in morsels.
  6. Place paper baking c. in muffin pans, and coat with cooking spray; spoon batter into pans, filling c. two-thirds full.
  7. Bake at 350 degrees for 17 min.
  8. Remove cupcakes from pans immediately, and cold on wire racks.
  9. Spread with frosting, if you like.
  10. This recipe yields 1 1/2 dozen.
  11. Comments: These treats are delicious with or possibly without the vanilla frosting.
