Banana Chocolate Cupcakes Recipe
- 1/4 c. butter or possibly margarine softened
- 1 1/2 c. sugar
- 2 lrg Large eggs
- 1 c. mashed bananas - (abt 3 small)
- 1 tsp vanilla extract
- 2 c. all-purpose flour
- 1 1/2 tsp baking soda
- 1/8 tsp salt
- 1/3 c. buttermilk
- 1 c. semisweet chocolate morsels - (6 ounce) Vegetable cooking spray as needed
- 1 ct vanilla frosting - (16 ounce)
- Beat butter at medium speed with an electric mixer till creamy; gradually add in sugar, beating well.
- Add in Large eggs, banana, and vanilla, beating till blended.
- Stir together flour, soda, and salt.
- Add in flour mix to banana mix alternately with buttermilk, beginning and ending with flour mix; beat at low speed till blended after each addition.
- Stir in morsels.
- Place paper baking c. in muffin pans, and coat with cooking spray; spoon batter into pans, filling c. two-thirds full.
- Bake at 350 degrees for 17 min.
- Remove cupcakes from pans immediately, and cold on wire racks.
- Spread with frosting, if you like.
- This recipe yields 1 1/2 dozen.
- Comments: These treats are delicious with or possibly without the vanilla frosting.
