Lemon Light Drop Cookies

  1. In a large bowl, cream the sugar, shortening and lemon peel until light and fluffy. Add eggs; beat well. Add yogurt and lemon extract; mix well. Stir in flour, baking powder, soda and salt. Blend well. Drop by teaspoonfuls 2-inches apart on greased cookie sheet. Sprinkle sugar or chopped nuts over tops and bake at 350u0b0 for 10 to 12 minutes or until lightly browned around edges. Remove from cookie sheets immediately and cool.
  2. Makes 6 dozen.
