Roasted onions and pork
- 4 1/2 lb pork bottom cushion
- 8 cup sweet onions, yes really used eight cups
- 3 large stalks of celery
- 1 tbsp salt
- 1/2 cup Chinese black vinegar
- 1/2 cup water
- 1 tbsp xanthan gum
- 2 piece star anise
- 1/4 cup minced garlic
- 1 tsp cumin seeds
- 1 tbsp cilantro
- 1 1/2 tbsp vegetable oil
- Preheat oven 425 Fahrenheit
- Put pork into a roaster.
- Take a pan add some oil and spices, except the cilantro, to oil and heat till garlic is goldening
- Add spiced oil to the pork
- Slice your celery and onion.
- Add to pork.
- Add cilantro.
- Add the Chinese black vinegar and water.
- Add the margarine to the top of onions and celery.
- Cook till done.
- 1 hour covered, remove the two anise pods,1 hour uncovered.
- Remove the meat from roaster.
- Heat juices.
- Add Xanthan gum to juices to thicken.
- Let sit 10 minutes serve hope you enjoy!
- Add meat back to thickened juices
- Xanthan gum is a natural thickener/ binder.
