Sunday Craving Chicken Sandwich
- 1 (16 ounce) jar dill pickles
- 3 cups peanut oil or 3 cups vegetable oil or 3 cups shortening
- 1 egg
- 1 cup milk
- 1 cup flour
- 1 teaspoon msg (optional)
- 2 12 tablespoons powdered sugar
- 12 teaspoon black pepper
- 2 teaspoons salt
- 2 boneless skinless chicken breasts, halved
- 2 plain hamburger buns
- 2 tablespoons butter
- 8 dill pickle slices
- Marinate the chicken for a couple hours up to 24 hours in dill pickle juice (save the pickles or eat them).
- In a small bowl, beat the egg and milk together.
- In a separate bowl, combine the flour, sugar, pepper, msg, and salt.
- Add 1 to 1-1/2 tablespoons of egg mixture to dry mixture and mix to look like crumbly sand.
- Dip each piece of chicken in milk mixture until fully moistened.
- Roll the moistened chicken in flour mixture until completely coated.
- Let chicken rest during next step on a wire rack.
- Heat the frying oil in a dutch oven on medium to about 400 degrees.
- Drop all chicken into the hot oil and cook approximately 10 minutes (try to keep oil around 350-400 degrees).
- Test doneness by removing a piece and using meat thermometer or cutting open.
- When chicken is done, remove from oil and drain on wire rack (paper towels underneath).
- Spread butter on inside of bun and lightly toast on medium in medium pan on stove top.
