Cornbread
- 1 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 2 1/2 c. cornmeal
- 1 Tbsp. honey or sucanat
- 1 egg, beaten
- 1 Tbsp. clarified butter, melted
- 2 c. buttermilk or 4 Tbsp. vinegar + milk to make 2 c.
- 1/2 c. yellow cornmeal
- 1/2 c. all-purpose flour
- 1/2 c. oat bran
- 1/2 c. rice bran or apple fiber
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 c. low-fat buttermilk, mixed with 1/2 c. water
- 1 Tbsp. vegetable oil
- 2 Tbsp. minced jalapeno peppers
- 1/2 c. frozen corn kernels, thawed
- 3 egg whites
- Preheat oven to 400u0b0.
- Spray an 8 inch square baking pan with Pam or Baker's Joy.
