Cheesecake, Lowfat

  1. Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended.
  2. Add eggs; mix until just blended.
  3. DO NOT OVERMIX AFTER ADDING EGGS.
  4. Mix graham cracker crumbs with 2 tablespoons sugar.
  5. Spray a 9 inch pie plate with cooking spray; sprinkle crumb mixture over bottom and sides.
  6. Pour cream cheese mixture into pie plate.
  7. Bake at 325 degrees for 45 minutes or until center is almost set.
  8. Cool.
  9. Refrigerate 3 hours or overnight.
  10. Top with fruit or pie filling if desired.
