Bayou Hot Slaw Recipe
- 1 med Head cabbage, 2-1/2 to 3 pounds
- 1 lrg Onion, chopped
- 1 lrg Green onion, chopped
- 1 sm Sweet red pepper, chopped
- 4 stalk celery, sliced thin
- 1/2 c. Vegetable oil
- 1 x Bay leaf
- 2 Tbsp. Flour
- 1/2 c. Sugar
- 1 c. Water
- 1 1/4 c. White vinegar
- 1 tsp Worcestershire sauce
- 1/2 tsp White pepper
- 1/2 tsp Dry mustard
- 1/2 tsp Garlic pwdr
- 1/4 tsp Cayenne pepper
- Place first 5 ingredients in a large salad bowl and mix well.
- In a saucepan, heat oil and bay leaf and stir in the flour, but do not let it brown.
- Add in sugar and water, stirring till thickened.
- Pour in the vinegar and spices and stir till you have a thick sauce.
- Cold to lukewarm and pour over the slaw.
- Toss and mix well.
- Refrigerateand serve cool.
- If you want a hotter slaw, add in more cayenne.
- Serves 6.
