Lalla's Special Mutton/Beef/Chicken Curry
- 1 kg Mutton/beef/chicken
- 2 tbsp Oil to mix
- 2 medium Sized Onions
- 3 medium Potatos
- 1/2 cup chopped carrots
- 2 Tomatoes
- 1 tsp Salt
- 2 tbsp Mixed Masala
- 2 tbsp crushed green ginger/garlic paste
- 1 tsp Tumeric Powder
- 10 curry leaves
- 6 Cardamon Pods crushed
- 5 Cinnamon Sticks
- 5 Star Cinnamon
- 5 Cloves
- 1 tsp Cumin Powder
- 2 tbsp Coriander Leaves
- 1 tsp Garum Masala
- Cut meat in 2cm cubes and mix with cumin and coriander powder
- On medium head saute onions in 4 tbsp of vegetable oil with masala, tumeric, crushed green ginger/garlic paste, salt, cloves, cinnamon, cardamon until onions are golden brown
- Add meat to the onion mix and braze for about 5 mins.
- Add 1 1/2 cup of water and curry leaves and simmer for until meat is almost tender; add more water as and when required
- Add tomatoes, potatoes quartered, carrots and garum masala and another 1/2 cup of water, bring to the boil and simmer until potatoes are cooked through
- Serve with steamed rice of you choice and sprinkle with some fresh coriander leaves for garnish
