Fish Florentine With Lemon Mayonnaise
- 20 oz. spinach, chopped (fresh or frozen)
- 1/8 tsp. lemon pepper or to taste
- 1 1/2 lb. fish fillets
- 1 1/2 c. mayonnaise
- 4 1/2 Tbsp. lemon juice
- 1/2 tsp. salt or to taste
- 2 or 3 dashes paprika
- 1 fresh lemon, quartered
- Clean fresh spinach, removing stems and wilted leaves, then chop finely (or thaw frozen chopped spinach).
- In a large saucepan, cook spinach in water to cover until tender, 5 minutes at most.
- Remove from heat and drain spinach very thoroughly. Spread in bottom of buttered, shallow baking dish.
- Sprinkle with lemon pepper.
- Spread fish fillets over spinach.
- Combine mayonnaise with lemon juice and salt, stirring to fully mix.
- Pour over fish fillets and spinach, coating evenly, then sprinkle lightly with paprika.
- Bake in a 350u0b0 oven for about 25 minutes until fish is done, but not dry.
- Serve hot with fresh lemon quarters.
- Serves 4.
