Fish Florentine With Lemon Mayonnaise

  1. Clean fresh spinach, removing stems and wilted leaves, then chop finely (or thaw frozen chopped spinach).
  2. In a large saucepan, cook spinach in water to cover until tender, 5 minutes at most.
  3. Remove from heat and drain spinach very thoroughly. Spread in bottom of buttered, shallow baking dish.
  4. Sprinkle with lemon pepper.
  5. Spread fish fillets over spinach.
  6. Combine mayonnaise with lemon juice and salt, stirring to fully mix.
  7. Pour over fish fillets and spinach, coating evenly, then sprinkle lightly with paprika.
  8. Bake in a 350u0b0 oven for about 25 minutes until fish is done, but not dry.
  9. Serve hot with fresh lemon quarters.
  10. Serves 4.
