Oriental Spinach Salad
- 1 lb. fresh spinach, washed and drained
- 1 can bean sprouts, drained
- 1 can Chinese vegetables, drained
- 1 c. sesame seed oil
- 1/2 c. soy sauce
- 4 Tbsp. lemon juice (2 lemons)
- 3 Tbsp. chopped onion
- 3 Tbsp. toasted sesame seed
- 1 tsp. sugar
- 1 tsp. pepper
- 1 can sliced water chestnuts, drained
- Soak bean sprouts and Chinese vegetables in cold water for several hours until crisp.
- Drain thoroughly.
- Wash, dry and chill spinach.
- In a bowl, combine oil, soy sauce, lemon juice, onion, sesame seed, salt and pepper; let stand for 1 hour. Arrange spinach in salad bowl; top with sprouts and Chinese vegetables, then water chestnuts.
- Pour dressing over and toss thoroughly.
