Oriental Spinach Salad

  1. Soak bean sprouts and Chinese vegetables in cold water for several hours until crisp.
  2. Drain thoroughly.
  3. Wash, dry and chill spinach.
  4. In a bowl, combine oil, soy sauce, lemon juice, onion, sesame seed, salt and pepper; let stand for 1 hour. Arrange spinach in salad bowl; top with sprouts and Chinese vegetables, then water chestnuts.
  5. Pour dressing over and toss thoroughly.
