Basic Sourdough Bread Recipe

  1. Cool water
  2. Mix 1 st 3 ingreds.
  3. in 3 quart.
  4. glass bowl with wooden spoon till smooth.
  5. Cover; let stand in hot, draft-free place for 8 hrs.
  6. Add in 3-3/4 C flour, sugar, salt, baking soda and oil to the mix in bowl.
  7. Stir with wooden spoon till smooth and flour is completely absorbed.
  8. (Dough should be just hard sufficient to gather into a ball.
  9. If necessary, add in remaining 1/2 C flour gradually, stirring till all flour is absorbed.)
  10. Turn dough onto heavily floured surface; knead till smooth and elastic, about 10 min.
  11. Place in greased bowl; turn greased side up.
  12. Cover; let rise in hot place till double, about 1-1/2 hrs.
  13. (Dough is ready if indentation remains when touched.)
  14. Punch dough down; divide into halves.
  15. Shape each half into a round, slightly flat loaf.
  16. Don't tear dough by pulling.
  17. Place loaves in opposite corners of greased cookie sheet.
  18. Make three 1/4" deep slashes in each loaf.
  19. Let rise till double, about 45 min.
  20. Heat oven to 375.
  21. Brush loaves with cool water.
  22. Place cookie sheet in center of oven; it shouldn't touch the sides of the oven.
  23. Bake, brushing occasionally with water, till loaves sound hollow when tapped, about 50 min.
  24. Remove from cookie sheets; cold on wire racks.
  25. Be sure to let dough rise completely both times - it might take longer than the estimated times given.
