Quick Croque Monsieur

  2. Heat oven to 475 degrees.

  4. Melt 2 tablespoons butter in a saucepan over medium heat.
  5. Whisk in flour and cook until golden, about 2 minutes.
  6. Slowly whisk in milk and simmer until slightly thickened, 3 to 5 minutes.

  8. Off heat, stir in 1/2 cup cheese, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
  9. Cover and keep warm.

  11. Spread remaining butter over 4 slices of bread.
  12. Arrange, butter-side down, on a rimmed baking sheet.
  13. Spread each slice with mustard, then divide ham, 1 cup cheese, and 1/2 cup sauce over mustard-topped slices and top with remaining bread.
  14. Top with remaining sauce and cheese.

  16. Bake until cheese is golden brown and bubbling, about 8 to 10 minutes.
