PARMESAN PANKO CHICKEN TENDERS
- 1 1/2 lb chicken breast tenders
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp garlic powder
- 2 large eggs (lightly beaten)
- 1 cup panko (Japanese breadcrumbs)
- 1/3 cup grated parmesan cheese
- 3 tbsp canola oil
- 2 tbsp fresh parsley
- Sprinkle chicken with salt, pepper, and garlic powder
- Place eggs in a shallow bowl
- Combine panko and cheese in another shallow bowl
- Dip chicken in the eggs, then dip them in the panko cheese mixture (cover chicken well)
- Heat the oil in a skillet over med heat and cook until browned and done
- Sprinkle with parsley and serve
