Reduced Fat Roasted Potato Salad

  1. Combine potatoes, apples and red onions in a baking dish.
  2. Spray with olive oil spray.
  3. Bake at 200C for 40 minutes or until golden brown.
  4. Drizzle with dressing.
  5. Top with spring onions.
  6. Serve.
