Turnip Pudding Recipe
- 8 med. white turnips, peeled & sliced
- 2 tbsp. onion, minced
- 1/2 c. skim lowfat milk
- Vegetable salt to taste
- 2 egg whites, beaten stiff
- Cook turnips and onion in steamer till just tender.
- Drain, mash or possibly whip thoroughly in blender or possibly food processor.
- Heat lowfat milk, add in turnips and cook till lowfat milk is absorbed.
- Cold.
- Season and fold into the stiffly beaten egg whites.
- Pour into lightly buttered casserole and bake at 350 degrees till puffy and lightly browned.
- Recommended portion: 1/2 c. (48 calories).
