Mom'S Chili
- 1 1/2 c. chopped green pepper
- 3/4 c. celery
- 3/4 c. onions
- 1 can sliced mushrooms
- 1 1/2 Tbsp. chili powder
- 3/4 tsp. thyme
- 3/4 tsp. oregano
- 3/4 tsp. cumin
- 1/2 tsp. red pepper
- 1 1/2 to 2 Tbsp. cornstarch
- 1 (15 oz.) black beans, drained
- 1 can red chili beans
- 1 can pinto beans
- 2 cans Great Northern beans
- 1 can whole kernel corn
- 1 can ripe olives
- 1 can chopped chilies
- 2 (16 oz.) tomato paste
- 3 (14 oz.) cans tomatoes
- 2 (14 1/2 oz.) chicken broth
- Simmer 45 minutes to 1 hour.
- If too thick, add some water or more chicken broth.
- Can also add small pieces of ham.
- Add cornstarch just before removing from heat.
