Pfeffernuesse Cookies

  1. In saucepan, combine molasses and butter.
  2. Cook and stir until butter melts.
  3. Cool to room temperature.
  4. Stir in eggs.
  5. Sift together the rest of the dry ingredients - except the confectioners' sugar - in a large bowl.
  6. Add molasses mixture, mix well.
  7. Dough is very stiff.
  8. Chill several hours or overnight.
  9. Shape chilled dough into 1" thick balls.
  10. Bake on greased cookie sheet in moderate (375-degree F) oven for 8-10 minutes.
  11. Cool.
  12. Roll in confectioners' sugar.
  13. Put about 1/2 cup confectioners' sugar in plastic bag.
  14. Add cookies, close and gently toss around bag until well coated.
  15. Makes about 6 dozen small cookies.
