Pfeffernuesse Cookies
- 34 cup dark molasses
- 12 cup butter or 12 cup margarine
- 2 beaten eggs
- 4 14 cups sifted flour
- 12 cup sugar
- 1 14 teaspoons baking soda
- 1 12 teaspoons cinnamon
- 12 teaspoon clove
- 12 teaspoon nutmeg
- 116-18 teaspoon black pepper
- 12 cup confectioners' sugar
- In saucepan, combine molasses and butter.
- Cook and stir until butter melts.
- Cool to room temperature.
- Stir in eggs.
- Sift together the rest of the dry ingredients - except the confectioners' sugar - in a large bowl.
- Add molasses mixture, mix well.
- Dough is very stiff.
- Chill several hours or overnight.
- Shape chilled dough into 1" thick balls.
- Bake on greased cookie sheet in moderate (375-degree F) oven for 8-10 minutes.
- Cool.
- Roll in confectioners' sugar.
- Put about 1/2 cup confectioners' sugar in plastic bag.
- Add cookies, close and gently toss around bag until well coated.
- Makes about 6 dozen small cookies.
