Seafood Gumbo
- 4 Tbsp. butter
- 4 Tbsp. flour
- 1 c. chopped onion
- 1 c. chopped celery
- 1 lb. okra, sliced
- 1 qt. tomatoes
- 1 bell pepper, diced
- 6 c. hot water
- 1 lb. cleaned shrimp
- 1 qt. oysters
- 1 lb. crab meat
- 5 bay leaves
- 1/2 c. chopped parsley
- 3 to 4 green onions, chopped
- Creole seasoning to taste
- cooked rice
- 2 to 3 cloves garlic
- Brown butter and flour. Add onion, celery and pepper.
- Saute until light brown. Add okra and cook until okra is not ropey. Stir often.
- Add tomatoes, hot water, bay leaves, garlic and crab meat, in that order. Simmer for 30 minutes. Add shrimp, oysters, green onions and parsley.
- Season to taste. Simmer 1 hour and serve over rice.
