Crispy Ginger Chicken And Peaches(Makes 6 Servings)
- 1 broiler-fryer (about 2 1/2 lb.)
- 1/4 c. yellow cornmeal
- 1/4 c. all-purpose or whole wheat flour
- 1 tsp. ground ginger
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. paprika
- 1/2 tsp. onion salt
- 1/4 tsp. garlic salt
- 1/4 to 1/3 c. milk
- 1 (16 oz.) can sliced peaches, drained
- 2 Tbsp. soy sauce
- 1 tsp. packed brown sugar
- 1/8 tsp. ground ginger
- Cut chicken into 6 serving size pieces.
- Mix cornmeal, flour, the 1 teaspoon ginger, salt, sugar, paprika, onion salt and garlic salt.
- Dip chicken into milk; coat with cornmeal mixture.
- Place, skin side up, in a 13 x 9 x 2-inch baking pan.
- Bake, uncovered, in a hot oven (400u0b0) for 50 minutes.
