Jam Bites
- 1 1/2 c. powdered sugar
- 1 c. margarine or butter, softened
- 1 egg
- 1 tsp. vanilla
- 1/2 tsp. almond extract
- 2 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 1/2 c. jam
- Glaze (below)
- Mix powdered sugar, margarine, egg, vanilla and almond extract.
- Stir in flour, baking soda and cream of tartar.
- (If dough is soft, cover and refrigerate at least 1 hour.) Heat oven to 375u0b0.
- Divide dough into 12 equal parts.
- Shape each part into strip, 8 x 1 1/2-inches, on lightly greased cookie sheet.
- Make indentation lengthwise down center of each strip with handle of wooden spoon.
- Spread 1 teaspoon jam in each.
- Bake about 10 minutes.
- Cool 2 minutes; cut strips at an angle into 1-inch slices.
- Remove from cookie sheet; cool.
- Makes 8 dozen.
