West Coast Bouillabaisse
- 1 c. sliced white onions
- 2 stalks celery, sliced
- 2 cloves garlic, minced
- 1 Tbsp. vegetable oil
- 4 c. chicken broth
- 1 (28 oz.) can tomatoes with juice, cut up
- 1 (6 1/2 oz.) can minced clams with juice
- 1/2 c. white wine
- 1 tsp. Worcestershire sauce
- 1/2 tsp. thyme, crushed
- 1/4 tsp. Tabasco sauce
- 1 bay leaf
- 1 c. cooked bay shrimp (thawed)
- 1 halibut steak, cut in bite size pieces
- 1 c. imitation crab meat
- salt and pepper to taste
- 6 slices lemon
- French bread
- In Dutch oven, saute onion, celery and garlic in oil for 3 minutes.
- Stir in broth, tomatoes with juice, clams with juice, wine, Worcestershire sauce, thyme, Tabasco and bay leaf.
- Bring to a boil and simmer for 15 minutes.
- Stir in shrimp, crab meat and halibut and cook for 5 minutes more.
- Remove bay leaf.
- Season with salt and pepper to taste.
