Stir-Fry Chicken
- 1/2 c. water
- 3 Tbsp. soy sauce
- 2 Tbsp. cooking sherry
- 1 Tbsp. cornstarch
- 2 tsp. brown sugar
- 1 1/2 tsp. minced fresh ginger
- 1 large or 2 small onions, sliced
- 2 large bell peppers
- 2 to 4 pieces fresh garlic, chopped
- 2 large chicken breasts, deboned, skinned and cut in 1-inch cubes
- Mix first 6 ingredients in a bowl.
- Stir and set aside.
- In a large skillet sprayed with nonstick spray, over medium-high heat, add chicken and cook, stirring occasionally.
- Cook about 3 minutes, then add onion and bell pepper and continue cooking about 2 minutes.
- Pour the sauce mixture and cook an additional 1 minute.
- Remove from heat.
- Serve with rice or angel hair noodles. Serves 4.
