Chocolate Beet Cake

  1. Puree beets in blender.Place in lg.
  2. bowl; Add sugar, oil and 1/2 cup juice; mix on medium till well-combined.
  3. Add eggs and vanilla blending well.
  4. Add dry ingredients beating at least 2 minutes.
  5. Add melted chocolate and mix well.
  6. Pour into greased and lined 9x13 pan.
  7. Scatter chocolate chips evenly over the top.
  8. Bake at 350 30 to 35 minutes until tests done.
  9. Cool to room temperature.
  10. Frost or sift with powdered suagr.
