Raw Tapioca Chia Pudding
- 1 cup Raw Cashews
- 3 cups Water
- 2 Tablespoons Honey
- 1 Tablespoon Vanilla Extract
- 1/4 teaspoons Almond Extract
- 1 pinch Celtic Sea Salt
- 1/4 cups Chia Seeds
- Place cashews and water in a powerful blender (such as Vitamix) and blend on high speed until smooth.
- Blend in honey, vanilla, almond extract and salt.
- Place chia seeds in a large Mason jar (half-gallon size).
- Pour cashew mixture into jar and shake well (very well!).
- Place in the refrigerator overnight.
- Serve.
