Raw Tapioca Chia Pudding

  1. Place cashews and water in a powerful blender (such as Vitamix) and blend on high speed until smooth.
  2. Blend in honey, vanilla, almond extract and salt.
  3. Place chia seeds in a large Mason jar (half-gallon size).
  4. Pour cashew mixture into jar and shake well (very well!).
  5. Place in the refrigerator overnight.
  6. Serve.
