Gluten Free Peanut Butter Chocolate Chip Cookies

  1. Preheat the oven to 350 degrees.

  3. In a large bowl, mix the sugar and eggs together until fully combined.

  5. Add the peanut butter and mix with a wooden spoon to combine (there is something about the wooden spoon...).

  7. Add the chocolate chips and combine.

  9. Cover a cookie sheet with aluminum foil and using a medium cookie scoop, scoop the dough onto the cookie sheets, leaving about 1 1/2 between each scoop.

  11. Bake the cookies util the bottoms are golden brown, between 13 and 15 minutes.
  12. Let cook for a few minutes on the cookie sheet then transfer the foil to a cooling rack to finish cooling.
