Spicy JELL-O JIGGLERS
- 2 pkg. (3 oz. each) JELL-O Lemon Flavor Gelatin
- 2 pkg. (3 oz. each) JELL-O Orange Flavor Gelatin
- 2 pkg. (3 oz. each) JELL-O Raspberry Flavor Gelatin
- 5-1/2 cups boiling water, divided
- 1/4 cup hot pepper sauce
- 2 canned chipotle peppers in adobo sauce, chopped
- 1/3 cup chopped pickled jalapeno peppers
- 1 cucumber, cut into 24 slices
- 1 small jicama, peeled, cut lengthwise in half, then crosswise into 24 slices
- 1/2 fresh pineapple, cored, cut lengthwise in half, then crosswise into 24 slices
- Empty each flavor gelatin mix into separate medium bowl.
- Add 1-1/2 cups boiling water to lemon gelatin and 2 cups boiling water to each remaining flavor gelatin; stir 2 min.
- until completely dissolved.
- Stir hot sauce into lemon gelatin, chipotle peppers into orange gelatin and jalapeno peppers into raspberry gelatin.
- Cool 30 min.
- Pour each flavor gelatin into separate 8-inch square dish sprayed with cooking spray.
- Refrigerate 3 hours or until firm (gelatin does not stick to finger when touched).
- Serve lemon JIGGLERS over cucumbers, orange JIGGLERS over jicama, and raspberry JIGGLERS over pineapple.
