Creole Smokies

  1. Wash and slice okra.
  2. Fry okra and onion in hot shortening until okra is no longer slimy( about 15 min ).
  3. Cut sausage into 1/2 " slices and add with salt and tomatoes.
  4. Cover and simmer 20 minute.
  5. Serve over rice.
