Sweet Potato Casserole With Rum

  1. Preheat oven to 350F.
  2. Grease a 9 X 13 inch baking dish.
  3. In a large bowl, mix potatoes and white sugar.
  4. Stir in eggs.
  5. Mix in vanilla, milk, and 1/2 cup melted butter.
  6. Gradually stir in rum until well blended.
  7. Transfer mixture into prepared baking dish.
  8. In a medium bowl, mix brown sugar, pecans, flour, and 1/3 cup melted butter.
  9. Sprinkle this mixture over the mashed sweet potato mixture.
  10. Bake for 30 minutes.
  11. Allow to sit at least 10 minutes before serving.
  12. *The rum in this recipe can be adjusted according to taste.
  13. It also tastes good if you leave the rum out completely.
