Cinnamon-Apple Salads
- 1/2 c. red cinnamon candies
- 2 c. water
- 6 small tart apples, peeled and cored
- 13 oz. pkg. cream cheese, softened
- 2 Tbsp. milk
- 1 tsp. lemon juice
- 1 (8 1/4 oz.) can crushed pineapple, drained
- 1/3 c. snipped pitted dates
- 2 Tbsp. chopped walnuts

- In a 3-quart saucepan, cook and stir cinnamon candies in water until dissolved.
- Add apples and cook slowly uncovered for 15 to 20 minutes or until tender, turning once during cooking.
- Chill apples in syrup several hours, turning once.
- Blend cream cheese, milk and lemon juice until smooth; stir in pineapple, dates and walnuts.
- Drain apples.
- Stuff center of each apple with some cream cheese mixture.
- Serve on lettuce-lined plates.
- Makes 6 servings.
