Confetti Quinoa Salad

  1. Bring broth to boil in saucepan on high heat; stir in quinoa.
  2. Cover; simmer on medium-low heat 15 min.
  3. or until liquid is absorbed and quinoa is tender.
  4. Transfer to large bowl; cool to room temperature.
  5. Add all remaining ingredients except nuts; mix lightly.
  6. Refrigerate until ready to serve.
  7. For each serving: Top 1 cup (250 mL) quinoa salad with about 2 tsp.
  8. (10 mL) nuts.
