Sweet Potato Souffle
- 4 lb. sweet potatoes, cut up
- 1/2 c. milk
- 1/4 c. butter or margarine
- 1/2 c. firmly packed brown sugar
- 1/4 c. granulated sugar
- 1 tsp. ground cinnamon
- 1 c. miniature marshmallows
- Preheat broiler.
- Place potatoes in a large saucepan.
- Add milk and water to cover.
- Bring to boil.
- Reduce heat.
- Cover and simmer 15 to 20 minutes until soft.
- Drain potatoes, reserving cooking liquid.
- Place potatoes in food processor or blender.
- Add butter, brown sugar, granulated sugar and cinnamon.
- Process until well blended.
- Thin with reserved cooking liquid, if necessary. Pour mixture into 9-inch square glass baking dish.
- Sprinkle marshmallows over potatoes mixture.
- Broil 8 inches from heat source for 1 minute until marshmallows are lightly browned.
