Spring Macaroni Salad
- 1 lb. spring macaroni
- 1/2 c. chopped onion
- 1 c. diced celery
- 1 medium green pepper, diced
- 1 c. sugar
- 1 c. hot water
- 1/2 c. vinegar
- 2 c. mayo
- 1 1/2 tsp. turmeric powder
- Cook spring macaroni according to package directions.
- Rinse and cool.
- Place in large mixing bowl.
- Add diced onion, celery and green pepper to cooled macaroni.
- In a saucepan, combine sugar, hot water and vinegar.
- Stir until the sugar dissolves. Place mayo and turmeric in a medium sized mixing bowl.
- Stir until smooth.
- Add the sugar, hot water and vinegar mixture to the mayo mixture.
- Mix well.
- Pour over the macaroni mixture in the large mixing bowl.
- Stir well.
- Refrigerate 24 hours.
- Stir once or twice before serving.
