Popcorn Nut Brittle Recipe
- 1 1/2 c. sugar
- 1/2 c. light corn syrup
- 1/2 c. water
- 1/2 teaspoon salt
- 8 c. popped corn
- 1 c. toasted, slivered almonds or possibly peanuts
- 1/2 c. minced candied cherries
- 2 tbsp. butter
- 1 teaspoon vanilla
- Combine sugar, corn syrup, water, and salt in heavy saucepan.
- Stir over low heat till sugar is dissolved.
- Cook over medium heat to hard cracked stage (300 degrees).
- Meanwhile, spread the popcorn, nuts, and cherries in a buttered 15 1/2 x 10 1/2 x 1 inch pan and heat in 350 degree oven for 10 min.
- Remove syrup from heat; quickly stir in butter and vanilla till butter melts.
- Pour over popcorn mix; stir to coat all pcs.
- Spread thin on flat surface.
- Cold.
- Break into pcs.
- Makes 1 1/4 pounds.
