Spicy Maple Walnuts
- 4 Tablespoons Unsalted Butter
- 13 cups Pure Maple Syrup
- 1 Tablespoon Fresh Ginger, Sliced
- 1 teaspoon Salt
- 1 teaspoon Ground Ginger
- 1/4 teaspoons Cayenne Pepper
- 1 pound Shelled Walnuts
- Crystallized Ginger To Taste, Minced (optional)
- Preheat the oven to 300 degrees F. Combine the butter, syrup, salt, ginger, and cayenne in a small sauce pan.
- Melt the butter over low heat and simmer for 2 to 3 minutes.
- Put the walnuts in a bowl and add the melted glaze.
- Toss to coat and then spread the walnuts in a single-layer on a parchment-lined baking sheet.
- Bake the nuts for 40 to 50 minutes, stirring at 15-minute intervals.
- When the nuts are light and almost dry when you toss them, they are done.
- Remove the nuts from the oven and cool completely.
- Nuts will be very hot.
- Once cooled sprinkle with crystallized ginger and serve.
- Nuts can also be stored in an airtight container.
