Low Carb Creamy Lime Almond Bars
- 1 cup whole raw almonds (unsalted)
- 1 12 teaspoons truvia artificial sweetener (1 1/2 packets)
- 2 tablespoons butter, melted
- 1 cup boiling water
- 1 (1/3 ounce) boxsugar-free lime gelatin
- 3 12 tablespoons truvia artificial sweetener (12 packets)
- 4 ounces cream cheese, softened
- 1 cup frozen whipped topping (thawed)
- 2 tablespoons grated lime zest
- Butter a 9X5" loaf pan.
- Place almonds in food processor and pulse until finely ground.
- In medium bowl, combine ground almonds with 1 1/2 teaspoons sweetener, blending well.
- Add melted butter and stir until blended.
- Press almond mixture into bottom of prepared loaf pan.
- In medium bowl, stir gelatin into boiling water followed by 3 1/2 tablespoons of sweetener and stir until completely dissolved.
- Using a hand-held electric mixer, blend cream cheese into gelatin until smooth and completely combined.
- Stir lime zest into mixture and gently fold in whipped topping until completely combined.
- Spoon mixture over prepared almond crust.
- Cover and refrigerate at least 3 hours.
- Cut into 8 squares and garnish with additional lime zest.
