Easy Strawberry Mousse

  1. Beat cream cheese and vanilla in large bowl with mixer until well blended.
  2. Add boiling water to gelatin mix in small bowl; stir 2 min.
  3. until completely dissolved.
  4. Add cold water; stir until slightly thickened.
  5. Gradually add to cream cheese mixture, beating after each addition until well blended.
  6. Gently stir in berries and 1-1/2 cups COOL WHIP.
  7. Spoon into 10 dessert dishes.
  8. Refrigerate 1 hour or until firm.
  9. Serve topped with remaining COOL WHIP.
