Baked Chicken Chimis'
- 2 or 3 c. chicken, cooked and cut up
- 2/3 c. picante sauce
- 1/3 c. green onions, sliced
- 3/4 tsp. ground cumin
- 1/2 tsp. crushed oregano
- 1 small can green chilies
- 8 flour tortillas, room temperature
- 1/4 c. melted butter
- 1 c. cheese, shredded
- 1 small can tomato sauce
- lettuce
- tomatoes
- olives
- guacamole or sour cream
- Combine chicken, picante sauce, green onions, cumin, oregano, chilies and tomato sauce.
- Brush one side of tortilla with melted butter.
- Spoon 1/3 to 1/2 cup chicken mixture on unbuttered side of tortilla.
- Top with cheese.
- Fold sides over, ends down.
- Place seam down in 9 x 13-inch baking dish.
- Bake at 450u0b0 for 13 minutes or until crisp and golden brown.
- Serve with sliced lettuce, tomatoes and olives along with guacamole or sour cream.
