Ricotta Herb Ebelskivers
- 34 cup flour
- 1 teaspoon sugar
- 1 teaspoon dried basil
- 12 teaspoon baking powder
- 12 teaspoon salt
- 2 eggs, separated
- 23 cup buttermilk
- 12 cup low-fat ricotta cheese
- cooking spray
- In medium bowl, combine dry ingredients.
- In small bowl, whisk together egg yolks, buttermilk and ricotta until smooth.
- Stir into flour mixture until blended.
- In another small bowl, whisk egg whites until stiff peaks form.
- Fold egg whites into batter.
- Spray cake pop wells with cooking spray.
- Fill each well with 1 tablespoon batter.
- Bake 4-6 minutes.
