Festive Holiday Meatballs
- 2 lb. ground round beef
- 2 c. fine bread crumbs
- 2 Tbsp. minced onion
- 1 clove minced garlic
- 4 Tbsp. chopped parsley
- 2 eggs
- salt and pepper to taste
- 2 Tbsp. butter or margarine
- 3 Tbsp. cornstarch
- 2 green peppers, sliced thin
- 1 c. vinegar
- 1 c. sugar
- dash of hot pepper sauce
- 1 Tbsp. Worcestershire sauce
- 1 medium onion, sliced thin
- 1 (20 oz.) can pineapple chunks with juice
- Combine beef, bread crumbs, onion, garlic, parsley, eggs, salt and pepper in large bowl until well mixed.
- Shape into 1-inch balls and brown in butter or margarine over medium heat.
- Remove from skillet and set aside.
