Apple Pancakes With Cider Sauce Recipe
- 2 c. Biscuit mix
- 1/2 tsp Cinnamon, grnd
- 1 x Egg, beaten
- 1 1/3 c. Lowfat milk
- 1 med Apple, shredded
- 1/2 c. Sugar
- 1 Tbsp. Cornstarch
- 1/8 tsp Cinnamon, grnd
- 1/8 tsp Nutmeg, grnd
- 1 c. Apple cider
- 1 Tbsp. Lemon juice
- 2 Tbsp. Butter or possibly margarine
- Combine biscuit mix and cinnamon in a bowl.
- Combine egg and lowfat milk; stire into dry ingredients till smooth.
- Stir in shredded apple.
- For each pancake, spoon about 1/4 c. batter onto a warm lightly greased griddle.
- Turn pancakes when tops are covered with bubbles and edges are brown.
- Serve with Cider Sauce.
- Makes about 13 4-inch pancakes (about half which if you make 'em big like I do).
- Sauce: Combine first 4 ingredients in a heavy saucepan.
- Gradually add in apple cider and lemon juice.
- Cook over medium heat, stirring constantly, till mix boils.
- Cook 1 minute, stirring constantly.
- Remove from heat, stir in butter or possibly margarine.
- Makes 1 1/4 c..
