Chunky Applesauce
- 1 1/2 lbs. golden Delicious apples, peeled, cored, chopped
- 3/4 lb. Red Delicious apples, peeled, cored and chopped
- 1 1/2 cup or more water
- 6 Tbsp. sugar
- 3 Tbsp. fresh lemon juice
- 1 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. grated lemon peel
- Combine apples in medium bowl.
- Transfer 1/3 of apples to heavy medium sauce pan.
- Add 1/2 cup water, sugar, lemon juice, cinnamon, ginger and lemon peel.
- Stir mixture over medium heat until sugar dissolves.
- Cover and simmer 10 minutes, stirring occasionally.
- Add half of remaining apples and 1/2 cup water. Cover and simmer 10 minutes, stirring mixture occasionally.
- Add all remaining apples and remaining 1/2 cup water.
- Cover and simmer until all apples are tender, stirring occasionally and adding more water by 1/4 cupfuls if applesauce seems too dry, about 10 minutes longer. Can be prepared up to one day ahead. Cover and refrigerate.
- Makes about 2 1/2 cups.
