Hearty Meatball Stew
- 1 lb. bulk pork sausage
- 2 Tbsp. oil
- 1/4 c. flour
- 1/8 tsp. pepper
- 1 c. water
- 10 3/4 oz. chicken broth
- 3 carrots, sliced
- 2 stalks celery, sliced
- 1 large onion, sliced
- 12 oz. can corn
- 2 c. water
- 1 medium head cabbage, cut into 8 wedges
- Shape sausage into balls.
- In large skillet, brown meatballs in oil, carefully turning to brown evenly.
- Remove meatballs from skillet.
- Reserve 2 tablespoons meat drippings in skillet; stir in flour and pepper. Gradually add 1 cup water and chicken broth. Cook until mixture boils and thickens, stirring constantly.
- Add carrots, celery, onion and meatballs.
- Simmer uncovered 20 to 30 minutes.
- Add corn; heat thoroughly.
- In large saucepan, heat 2 cups water to boiling; add cabbage.
- Cover and cook 8 minutes or until crisp-tender; drain.
- Arrange cabbage on serving platter surrounding stew.
- Makes 6 servings.
