Irene'S Country Chili
- 2 Tbsp. salad oil
- 1 lb. ground beef
- 1/2 lb. ground pork
- 1 1/2 c. sliced onion
- 1 c. diced celery
- 1/2 green pepper, diced
- 1 small garlic clove, cut fine
- 2 c. canned tomatoes
- 1 to 2 Tbsp. chili powder to taste
- 2 Tbsp. cold water
- 2 tsp. salt
- 1 tsp. sugar
- 1 tsp. Worcestershire sauce
- 4 c. red kidney beans
- cayenne pepper
- Brown meat in oil.
- Add onion, celery, green pepper and garlic.
- Brown until onion is golden.
- Add tomatoes, chili powder (mixed with the cold water), salt, sugar and Worcestershire sauce. Boil, covered, then simmer one hour.
- Add beans, drained.
- Cook, uncovered, until well heated and to desired thickness.
- Spice with a speck of cayenne pepper.
