Chocolate Espresso Cake
- 1 cup dry cocoa
- 2 cups espresso coffee
- 3 cups flour
- 2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 dash salt
- 4 eggs
- 2 sticks butter
- margarine
- 2-1/4 cup sugar
- 1 tsp. vanilla
- 3/4 tsp. almond extract

- Mix cocoa and coffee until smooth.

- In a separate bowl, combinedry ingredients.
- 3.
- Beat together eggs, butter, sugar and extracts.
- 4.
- Add flour and coffee mixtures to the butter mixture alternately, beginning and ending with dry ingredients.
- 5.
- Grease and flour the bottom of a 9x13-inch cake pan.
- Bake at 325F for 45 minutes to one hour, until tothpick inserted into center of cake comes out clean.
