Cajun Paneed Chicken
- 1/4 c. catsup
- 3 Tbsp. brown mustard
- 1 Tbsp. white pepper
- 1 Tbsp. cayenne pepper
- 2 tsp. garlic powder
- 2 tsp. paprika
- 1/2 tsp. thyme
- 1/4 tsp. rubbed sage
- 1/4 tsp. sweet basil
- 2 c. very fine bread crumbs
- 1 lb. chicken tenders, pounded
- vegetable oil for frying
- 3 eggs, beaten
- 1/3 c. Parmesan cheese
- Combine catsup, mustard and all of the seasonings in a small bowl; mix well.
- Combine eggs and Parmesan cheese in a shallow pan; mix well.
- In a separate pan, combine 2 tablespoons of the seasoning mix with the bread crumbs (a blender or food processor works best); set aside.
- Spread a thin layer of the remaining seasoning mix on each side of the chicken tenders.
- Soak the coated chicken in egg mixture for 30 minutes.
